Sea Holly, as Eryngium is more commonly known, is the dried flower for the person who wants something with real presence. Every thimble-shaped flower head is surrounded by a ruff of sharp, pointed bracts — the "holly" of the name — and every ruff carries the same distinctive metallic purple/blue-silver colouration that no other dried flower in the range can match. The stems dry to a rigid, woody strength that holds their form indefinitely, and the colour shifts subtly in different light: cool steel-blue in daylight, silver-green in shade, deep purple-blue against a dark background. Our Eryngium is air-dried from cut stems of Eryngium planum and E. alpinum, harvested from our own cutting field at Salle Moor Hall Farm when the metallic colour is at its most intense. We watch the plants across the season and take them at the moment the blue-silver reaches full expression — usually mid to late summer, when the sun has drawn the pigment forward across the flower heads and bracts.
The Colour Story: Eryngium's remarkable metallic colouration is entirely natural — it comes from the plant's own tissue chemistry, developed by the growing plant in response to sun exposure and the particular conditions of its coastal or alpine native environment. ⚠️ Handle With Care — The Prickly Nature
Eryngium is a thistle by family, and the bracts and flower heads are legitimately sharp. Not aggressive-cactus sharp, but capable of pricking a fingertip if handled carelessly. The safe way to handle a bunch is by the main stems below the flower head — always grip the smooth stem section rather than the spiky flower zone. If arranging with children or in high-contact areas, position the flower heads where they won't be brushed against or reached into. For most arrangement work, standard careful handling is sufficient — this is nothing like handling actual holly or a cactus, just enough sharpness to warrant awareness.

Properly cared for, dried Eryngium lasts for many years — genuinely one of the longest-lasting dried flowers in the range.
- Location: Display in a dry environment away from bathrooms, kitchens with steam, or areas of high humidity. Humidity is the main enemy of dried flowers — moisture reactivates plant tissue slowly and softens the rigid structure over time
- Direct sunlight: Avoid prolonged direct sunlight. The natural metallic blue colouration is stable but will slowly fade if exposed to strong UV for months on end. Bright indirect light is fine
- Dust management: Occasional gentle dusting with a soft brush or a hairdryer on cool setting keeps the flower heads clean. Never wash or spray with water
- Storage between uses: If storing between arrangements, wrap loosely in tissue paper and keep in a rigid box in a dry cupboard. Do not compress the flower heads
- Long-term: Expect years of display. Colour may soften very slowly over multiple years; structure will remain stable indefinitely in dry conditions
