Papaver somniferum 'Hungarian Blue' is the breadseed poppy that closes the circle between the ornamental garden and the kitchen: beautiful to look at in the border from June to July, then equally beautiful as an architectural seed pod from August onwards, and finally -- when the pods have dried and the seeds rattled -- a kitchen ingredient of genuine culinary value. The slate-blue seeds of Hungarian Blue are the poppy seeds of European baking tradition: the seeds scattered on bread rolls in Austria and Germany, pressed into the filling of Hungarian rétes and mákos kifélis (poppy seed pastries), mixed into the poppy seed cake that is the standard celebration cake of central European cuisine. The plant itself provides two distinct seasons of ornamental interest. Papaver somniferum seeds need light to trigger germination. Scatter seeds onto finely raked soil and press gently into the surface. If covering at all, use only 3-5mm of fine soil. Never bury poppy seeds deeper than this. Mixing the tiny seeds with a small amount of dry silver sand helps achieve even distribution and see where you have sown.

Direct Sow Only -- Taproot Hates Disturbance

Papaver somniferum develops a taproot from the earliest germination stages. Always direct sow in the final flowering position. Transplanting permanently damages the developing root system. This is one of poppies' great practical advantages: no indoor sowing, pricking out, or hardening off needed -- simply scatter where the flowers are wanted.

  4. Harvest seeds when pods are brown and seeds rattle inside when shaken. Cut the stem when the pod has turned from green-silver to brown and papery and you can hear the seeds moving inside (typically August-September). Invert over a clean bowl or sheet of paper and shake to release the slate-blue seeds through the vents under the pod crown. Dry fully in a warm airy space before storing in a glass jar.
