Borage is a useful annual herb with pretty, blue, star-shaped flowers and rough, hairy leaves. Pollinators are drawn to it like a magnet. Borage is known to yield an oil that can be taken orally as well as applied topically to promote healthy skin, joints, and the immune system.

Borage, which has a flavour that is reminiscent of cucumber in a subdued way, is an excellent way to improve the flavour of salads. Any dish can benefit from the addition of a touch of depth because of its delicate texture, which goes wonderfully with light vinaigrettes and creamy dressings.
