The story of the Texas Reaper is a classic tale of pepper artistry and the relentless pursuit of heat. This formidable pepper was brought into the world by chilli-head extraordinaire Steve Bender, a grower based in Texas. It is a strategic and potent cross between the undisputed king of heat, the Carolina Reaper, and the fiery Indian landrace pepper, the 7-Pot Primo. The goal was to create a pepper with the searing intensity of its parents but with a unique Texan twist, and boy, did he deliver!

The Texas Reaper is a mean-looking pepper that means business. It typically grows to about 5-7 cm long, often sporting a gnarled, bumpy texture and a wicked-looking stinger tail, a clear warning sign inherited from its Reaper lineage. Its shape can be somewhat variable, from a lumpy, almost spherical pod to a more elongated, menacing shape. As it ripens, it transforms from a vibrant green to a blazing, fiery red, practically glowing with intensity.

Now, for the taste. If you can get past the heat, there's a surprisingly fruity and slightly sweet flavour, reminiscent of its Reaper parentage, but with a more immediate and aggressive burn. Speaking of the burn, let's talk heat. The Texas Reaper is a superhot heavyweight contender. While it hasn't been officially crowned by Guinness, its heat level is estimated to be well over 1.5 million Scoville Heat Units (SHU), placing it firmly in the same scorching league as the Carolina Reaper. This is not a pepper for the faint of heart; it's a full-on, five-alarm fire that builds rapidly and lingers for a long, long time

Given its extreme heat, the Texas Reaper is best used with extreme caution. It's a favourite among heat-seeking extremists for creating face-meltingly hot sauces and powders. A tiny sliver can be used to add immense heat to large pots of chilli con carne or stews. Remember, with this pepper, less is definitely more! Always wear gloves when handling it.

Plant Size The Texas Reaper plant is a vigorous and somewhat sprawling grower, often reaching a height of 100-120 cm (36-48 inches), sometimes requiring staking due to the weight of its abundant fruit. It develops a sturdy main stem and numerous lateral branches, covered in lush green foliage. The pods themselves are iconic for their menacing appearance.
Pod Size

The pods are as formidable in appearance as their name suggests. They ripen from a light green to a deep, often mottled dark red or almost brownish-red when fully mature, hinting at their extreme potency. They are generally large, measuring 5-8 cm (2-3.2 inches) in length and 3-5 cm (1.2-2 inches) in diameter, exhibiting a highly irregular, gnarled, and deeply wrinkled surface. Many pods feature prominent "scorpion's tails" or distinct pointed tips, further adding to their menacing character.

Flavour The Texas Reaper Chilli offers a surprisingly complex and sought-after flavour profile. It typically possesses a deep earthy and robust smoky undertone, which is often characteristic of very dark-coloured super-hots. This is often accompanied by a subtle fruitiness and a pronounced bitterness that adds depth and intrigue before the overwhelming heat completely takes over. Its formidable and unique flavour makes it a powerful ingredient for crafting mind-blowingly hot sauces, extreme chilli powders, or for use in very minute quantities in BBQ rubs, chilis, or any dish where maximum heat with a dark, brooding flavour profile is desired.
