The Jalapeño Biker Billy is a select cultivar of Capsicum annuum, the most widely cultivated chilli species globally. While it retains the core characteristics of the traditional Jalapeño, "Biker Billy" is a specific, larger-fruited strain developed through careful selection. It's a testament to the ongoing evolution of beloved pepper varieties, enhancing desirable traits like size and meatiness while maintaining the classic Jalapeño heat and flavour that has made it a culinary icon, particularly in Mexican and Tex-Mex cuisines.

Scoville Rating/Heat Level The Jalapeño Biker Billy delivers the classic, approachable heat that makes Jalapeños so popular. It typically registers between 5,000 to 8,000 Scoville Heat Units (SHU). This places it firmly in the mild to medium category, providing a pleasant and noticeable warmth without being overwhelming. It's the perfect level for those who enjoy a gentle kick that adds excitement without discomfort, making it incredibly versatile for everyday cooking.
Plant Size The Jalapeño Biker Billy plant is a vigorous and highly productive grower, generally reaching a height of 60-90 cm (24-36 inches), forming a sturdy, well-branched bush. It's known for its abundant yield of notably larger pods.
Pod Size The pods themselves are the star attraction: they are impressively chunky, typically measuring 9-12 cm (3.5-5 inches) in length and 3-4 cm (1.2-1.6 inches) in diameter. They retain the classic cylindrical, blunt-ended shape of a Jalapeño, ripening from a glossy dark green to a deep, vibrant red if left to fully mature. Their extra-large size and thick walls make them exceptionally well-suited for stuffing and grilling.
Flavour The Jalapeño Biker Billy offers a bold and very familiar Jalapeño flavour. It has a fresh, grassy, and slightly tangy taste with a characteristic bright pepperiness. When ripe red, a subtle sweetness emerges, complementing its heat. Its thick walls provide a satisfying crunch and a good amount of "meat" to each bite. This makes it outstanding for making jalapeño poppers, slicing into nachos, tacos, and sandwiches, dicing into salsas and relishes, or adding a fresh, zesty kick to stews and chilis.
Growing Conditions

Use a light, well-draining seed-starting mix. Sow seeds ¼ inch (0.6 cm) deep.  Sow seeds indoors 8–10 weeks before the last frost date. Optimal soil temperature: 26–32°C (80–90°F); using a heat mat is strongly recommended for Capsicum chinense varieties.  Maintain high humidity by covering trays with a plastic dome or plastic wrap.  Provide 12–16 hours of light per day, ideally with grow lights.  Transplant seedlings outdoors when they have 4–6 true leaves and nighttime temperatures consistently stay above 15°C (59°F). Harden plants off for 7–10 days before moving them outside.  Space plants 50–60 cm (20–24 inches) apart in rows 70–90 cm (28–36 inches) apart.  Feed every 3–4 weeks with a balanced fertilizer (10-10-10) or switch to a high-potassium fertilizer once plants begin to flower and set fruit.
