The 7 Pot Infinity is a legendary English superhot chilli, born from an accidental cross-pollination in the greenhouse of Nick Woods in Grantham, Lincolnshire. A member of the formidable Capsicum chinense genus, this chilli pepper shot to fame in February 2011 when it briefly held the Guinness World Record for the world's hottest chilli. Its heat is exceptionally intense, with a Scoville rating that ranges from 1,067,286 to 1,250,000 SHU, placing it firmly in the same category as the planet's most potent peppers.

The plant itself grows into a vigorous and bushy shrub, typically reaching a height of 60 to 120 cm (2-4 ft). Its most menacing feature is its pods, which ripen to a vibrant, glossy red and have a heavily wrinkled and gnarled surface, a clear warning of the heat within. The pods are typically 4 to 6 cm long and often feature a distinctive pointed "scorpion tail," a characteristic shared by many superhot varieties. Inside, the medium-thick flesh is visibly oily, containing the high concentration of capsaicin that gives the pepper its power.

The 7 Pot Infinity is a master of deception when it comes to flavour. The initial taste is surprisingly pleasant, with sweet, fruity, and floral notes. However, this introduction is quickly followed by a ferocious, slow-building heat that scorches the back of the throat and lingers for an exceptionally long time, inspiring the "Infinity" name. Due to its extreme potency, it must be used with caution and is not recommended for raw consumption. It is best used sparingly to add intense heat to large dishes like stews and curries, or processed into fiery hot sauces, powders, and marinades.

Sowing & Growing Conditions

Sow indoors Jan-Mar with constant heat (). Requires a long growing season (90-110 days from transplant) and is best suited for greenhouse/polytunnel cultivation in the UK. Needs full sun, well-drained, fertile soil, and consistent watering. Feed with high-potassium fertilizer once fruit sets.

 All plants are grown on our farm in Norfolk, UK and are grown in an open pollinated area.
