The Bishops Crown is a uniquely shaped pepper with a rich history, believed to have originated in South America and Barbados. It is thought to have been introduced to Europe by the Portuguese sometime in the 18th century. This pepper is a member of the Capsicum baccatum species, a family known for its distinctively fruity flavours. The Bishops Crown has a mild to medium heat level, typically ranging from 5,000 to 30,000 on the Scoville Heat Unit (SHU) scale, placing its spiciness in a similar category to a jalapeño or serrano pepper.
The plant itself is a large and often sprawling specimen that can grow to be 3 to 4 feet tall, producing a generous crop of 30 to 50 pods. The pods are the most distinctive feature, with a three or four-winged shape that resembles a bishop's mitre, a flying saucer, or a bell. These fruits are about 1.5 inches wide and ripen from a pale green to a vibrant red. The flowers are also characteristic of the baccatum species, typically appearing white with greenish-yellow spots.
The flavour of the Bishops Crown is as unique as its shape. The wings of the pepper are sweet and fruity with a crisp, apple-like taste and very little heat. The spiciness is concentrated in the central part of the pepper that contains the seeds. This dual personality makes it incredibly versatile in the kitchen. The pods are excellent when eaten raw in salads, and their shape and hollow cavity make them perfect for stuffing with cheese and herbs before roasting. They are also a popular choice for pickling or for making a sweet and spicy jam
