The Aji Crujiente is a rare and exciting variety from the Capsicum baccatum species, known for its crisp texture — as the Spanish name “Crujiente” (meaning “crispy” or “crunchy”) suggests. This variety offers medium heat, exceptional crunch, and a fruity, citrusy flavour that makes it perfect for fresh snacking, salads, pickling, and salsas. It’s a real standout.

The Aji Crujiente is a distinctive and productive chilli that offers medium heat, eye-catching colour, and an exceptional crisp texture. Easy to grow and rewarding, it’s a fantastic choice for gardeners who want a chilli that shines not just for its flavour but also for its snappy, juicy bite.

Genus Capsicum Baccatum
Scoville Rating/Heat Level Medium heat, approximately 20,000–40,000 Scoville Heat Units (SHU) — comparable to a mild cayenne or serrano.
Plant Size Typically 90–150 cm (3–5 feet) tall.  Upright, bushy, and vigorous with long branches.  Medium-large soft green leaves.  Typical baccatum flowers — white with distinctive yellow-green spots.
Pod Size Elongated pods, usually 6–10 cm (2.5–4 inches) long and about 1.5–2 cm (½–¾ inch) wide, often slightly curved.  Ripens from light green to a vivid orange-red.
Flavour Outstandingly crisp and crunchy, which sets it apart from many other chillies.  Fruity, citrus-like with a slight sweetness, complemented by a clean, quick heat; fantastic raw or lightly cooked.
Growing Conditions

Sow seeds about 0.5 cm (¼ inch) deep in a fine, well-draining seed-starting mix, starting indoors 8–10 weeks before the last expected frost date. Ideal soil temperature: 24–30°C (75–86°F); use a heat mat for best results.  Maintain high humidity with a humidity dome or plastic wrap until seedlings emerge.  Transplant seedlings to larger pots when they have 2–4 true leaves. Harden off outdoors over 7–10 days before final planting.  Keep soil consistently moist, but not soggy; water deeply and less frequently to promote deep roots. Use a balanced fertiliser during the vegetative stage; switch to a bloom/fruit fertiliser with higher potassium once flowering starts
