Salsify (Sandwich Island) seeds

The roots are not unlike a thin parsnip in appearance but are delicate in flavour, often referred to as the vegetable oyster because once cooked, it takes on the rich taste of oysters!  It produces light brown skins with creamy white flesh that can be cooked in much the same way as you would a parsnip.
